ചാളകൾ or മത്തികൾ
കുറഞ്ഞ ചെലവിൽ കേരളീയർക്ക് ലഭിച്ചുവരുന്ന ഏറ്റവും പോഷകസമൃദ്ധമായ മത്സ്യമാണ് ചാളകൾ.
ചാളകൾ പിടിക്കാൻ ചാളവലകളാണ് പരമ്പരാഗതമായി ഉപയോഗിച്ചിരുന്നത്. അതൊരു സെലക്ടീവ് ഫിഷിംഗ് ഗീയർ ആണ്. നിശ്ചിത വലിപ്പമുള്ള ചാളകൾ മാത്രമേ അതിൽ ലഭിക്കു. എന്നാൽ ഇന്ന് അടക്കം കൊല്ലി വലകൾ പോലുള്ളവ ഉപയോഗിച്ച് കുഞ്ഞു ചാളകൾ വരെ പിടിച്ചെടുക്കുന്ന പ്രവണത ഏറി വരുന്നു. ചാളകളിൽ മക്രോണി ചാള അഥവാ നെയ്യ് ചാള എന്നിവയാണ് ഏറ്റവും സ്വാദേറിയത്. ചാളകൾ ഉണക്കി കരുവാട് ആക്കുമ്പോൾ(dry fish) അവയെ നെടുകെ പിളർന്ന് ഉണക്കാറില്ല. മുഴുവനായും ഉപ്പിട്ട് ഉണക്കി എടുക്കുന്നതാണ് ചാള കരുവാട് . ചാളകളിൽ നിന്നും മറ്റും നെയ്യ് ഉരുക്കി മീനെണ്ണ ഉണ്ടാക്കുന്ന ഫാക്ടറി രാജഭരണകാലത്ത് തിരുവനന്തപുരം ശംഖുമുഖത്ത് ഉണ്ടായിരുന്നു എന്ന് പറയുമ്പോൾ അക്കാലത്ത് എത്രമാത്രം ചാളകൾ ലഭ്യമായിരുന്നുവെന്ന് ഊഹിക്കാവുന്നതാണ്.
വലിയ കൂട്ടമായ് സഞ്ചരിക്കുന്ന കടൽ ജീവിയാണ് ചാളകൾ, പ്രത്യേകിച്ച് മക്രോണി ചാള.
അവ അങ്ങനെ സഞ്ചരിക്കുമ്പോൾ കടലിന്റെ ഉപരിതലത്തിൽ ഉണ്ടാകുന്ന നിറവ്യത്യാസത്തെ 'ചാളക്കറുപ്പ് 'എന്നാണ് പറയുക. ഈ കടൽ അറിവിന്റെ സഹായത്തോടെയായിരുന്നു പണ്ടുകാലത്തെ ചാള പിടുത്തം. ചാളകളിൽ കീരിമീൻ എന്ന ഇനത്തിന്റെ ശരീരത്തിൽ നിറയെ മുള്ളുകൾ ഉണ്ടാകും. ചാളകളുടെ മുട്ടയെ 'പരുവ് 'എന്നാണ് കടൽതീര ഭാഷയിൽ പറയുക. പെൺ ചാളകളുടെ ഉദരത്തിൽ കാണുന്ന പരുവകളുടെ അതേ വലിപ്പത്തിൽ ആൺ ചാളകളുടെ ഉദരത്തിൽ വെളുത്ത നിറത്തിലുള്ള ഒരു അവയവം കാണാം. ഇതിനെ കോസ്റ്റൽ കമ്മ്യൂണിറ്റി ചാളയുടെ പാൽ എന്നാണ് പറയുക.
Sardine
Sardine is one of the most economically nutritious food source for people in Kerala. Sardine fishing nets are a selective fishing gear used for catching them. But there has been increasing trend to use ring seine nets to catch smaller sardines also nowadays. 'Makroni chaala ' or Indian fatty pil sardine is the tastiest among sardines. Sardines are not split from its middle while drying, but are salted and dried as the whole. During royal ruling period in Thiruvananthapuram, there was a factory in Shangumugham that processed fish oil from sardines. This clearly shows how abundant their presence was in this coast.
Sardines, especially makroni sardine, travel in large schools. The colour contrast that appears on the ocean surface during their movement is known as "chaala karuppu ". This was integral in sardine fishing in earlier times. A type of sardine called "keeri meen " is characterised by thorns throughout its body.
The sardine eggs are known as "paruvu " in coastal vocabulary. While female sardines have eggs inside them, there's a similar looking organ inisde the male sardines too. The coastal communities call them "paal ".
